New and healthier trends have been becoming more and more popular.  One of my friends has been raving about her spaghetti squash so I had to see what it was all about. I wasn’t sure if I was going to like it, but I have to say I was impressed and really enjoyed it! You can put anything you like with your spaghetti squash, but we decided to use just a few simple ingredients. This is also a recipe that fed two, so you can also double or even triple the recipe if you need.

Here are the ingredients:
-          1 spaghetti squash
-          ½ onion diced
-          8-10 oz. of spinach
-          1 can of diced tomatoes
-          ½ cup of shredded mozzarella
-          2 cloves of garlic, minced
-          1 tsp. onion powder
-          ½ tsp. salt
-          ½ tsp. black pepper
-          Olive oil
-          Grated Parmesan cheese

Using a fork, poke a dotted line where you will later cut the squash in half. Microwave the squash for 5 minutes. Be careful taking it out because it will be hot. Cut the squash in half, using a sharp knife. Scoop out and throw away the seeds. Drizzle the inside of each side with olive oil and season with salt and pepper. Bake faces down at 400 degrees for about 30 minutes. Using two forks scrape out all of the spaghetti squash. Add to a pan on medium heat with onion, spinach, tomatoes, garlic, and onion powder. Cook for a few minutes until the spinach has shriveled. Add mozzarella cheese and cook until melted. Scoop the mix back into the outsides of the spaghetti squash. Sprinkle with Parmesan cheese and enjoy. You don’t have to feel bad about eating the entire thing because these are all good ingredients! Thanks for the delicious recipe Nicole!
